Theseketopecan shortbread cookiesare a simple as it gets. Though containing only four ingredients these low-carb cookies are packed full of flavor. With the combination of butter and toasted pecans, these crunchy keto cookies are hard to beat.

I like to use a mix of both pecan cookie pieces and pecan flour together in this recipe. This recipe actually used to use almond flour instead of pecan flour. However, after trying it out with pecan flour, It not only improved the taste but also made these cookies more keto-friendly.

As a matter of fact, by switching to pecan flour I almost cut the net carbs in each keto pecan shortbread cookie in half. Pecan flour is about as low in net carbs as you can go with nut flours. In fact, 1/4 cup of almond flour has only about 1 net carb. Almond flour, on the other hand, has roughly 3 net carbs per 1/4 cup.

If cutting the net carb nearly in half wasn’t enough, these keto pecan shortbread cookies also taste much better as well. Pecan flour has a great nutty taste and really adds a bunch of flavor to these low-carb cookies. They are after all pecan shortbread cookies. That said, it only makes sense to make these amazing cookies with pecan flour.
