Since smokers have become such a popular appliance and are used for smoking meat and such, I have taken the deviled egg recipe to the next level by making this smoked deviled egg dish, and it is delicious. Smoked Deviled Eggs Recipe

Ingredients

12 large fresh eggs

2 TBS brown mustard

4 TBS creamy mayonnaise (prefer Hellmann’s NOT Miracle whip)

1 tsp apple cider vinegar

2 tsp BBQrub

pickled jalapenos (garnish)

fresh chives (garnish)

sprinkle of paprika (garnish)

hot sauce (optional to add in filling)

Directions

Place eggs in a stockpot and add cold water until the eggs are submerged. Place on stove top over medium high heat and bring to a boil. Immediately remove from heat and place to the side in indirect heat with a covered lid. Allow it to finish cooking for 8 minutes. Fill a medium bowl with cold water and ice, creating an ice bath, and add hard-boiled eggs. After 6 minutes, remove the eggs with a slotted spoon and place them in the ice water bath. Tap the egg on a hard surface to crack, and then roll to further crack the eggs. Peel carefully under running, cold water.

Set the smoker to 180 degrees F. Preheat for 15 minutes with the lid closed. Fill the auger with your preferred kind of pellets or chips. Hickory wood chips are recommended. Place peeled eggs directly onto the grill grates, close the lid, and smoke for 45 minutes at low temps. Remove the smoked eggs and let them cool for a few minutes. Slice the eggs in half lengthwise and remove the egg yolks. Place the yolks in a small bowl or mixing bowl and add mayo, mustard, vinegar, BBQ rub, and other preferred seasonings. Beat the yolk mixture with a hand mixer or food processor until it gives a smooth filling with a yellow color. Transfer the mixture to a piping bag or pastry bag and pipe into the egg whites egg halves. Top with garnishes of your choice, and place each egg half on a serving plate. Chill until ready to serve. Store leftovers in a sealed container.
